饗宴という現象は、都市化が農村の饗宴に及ぼす影響など、社会的・文化的変化を研究する上で極めて貴重な材料を提供してくれる。つまり、その変化を映し出す「鏡」と認識することができる。それは常に、文明や文化が、生まれ、その重要な形と色を決定する社会的文脈の中に置かれているのである。饗宴や祝祭は、ある文化の伝統的な要素と新しい要素が隣り合わせに、あるいは互いに共存している様子を同時に見ることを可能にする。祭日の変化は、価値観、思想やイデオロギー、社会的・政治的構造、その機能、文化的創造性の変化を示す「敏感な指標」なのである。

本書は、社会変化、特に祝祭に関する異文化間比較への関心の高まりに応えるものである。本書は、ヨーロッパ、アジア、アフリカの国々の詳細な事例研究（ほとんどが自身の現地調査に基づいている）を収録しているため、一般的な祝祭に関する記述の実証的基盤を充実させるものである。(本書　「はじめに」より)
